When you are hired, your employer's payroll office will ask you to provide the legal document that show evidence that you are allowed to work. Like in your case, you show them your H1 document (I797) and you were asked to fill in I-9 form. Everybody will be asked to fill that form. If you don't want to use your H1, and switch to your EAD, you will have to give them a copy of your EAD and fill the I-9 form. Under the category allowing you to work legally, you must fill in EAD. That's called "use your EAD". I-9 form is required by law.
It may be a long time since you were hired, so you forgot about the form.
If you keep your H1 current, then eventhough you applied for EAD but never work under the category of EAD, then you haven't used your EAD yet.
