A u320 controller can work with a u160 SCSI device, but will operate at lower speed (u160). Most SCSI controllers use PCI to talk to the CPU, so that probably wouldn't be a problem. I am not sure if the SCA connector on the HD will work with the IDC connector. If you can post more details about the HD and controller, maybe we can find out more.
Throughput, SATA 1.5 can provide *roughly* about 150 MB/S, SATA 3.0: 300 MB/S. SCSI U160: 160 MB/S, u320: 320 MB/S. The performance is largely decided by the RPM of the HD.
