1) How to customerize (like in XP) the startup manu in Fedora Linux?

Not sure what your question exactly is. I assume you use Gnome since it's the default WM in FC. If you are talking about processes the WM should automatically start when it comes up, just like the startup folder in Windows, it's called sessions in Gnome. I haven't touched FC for a long time, so what I am saying here may not be 100% accurate. It should be in Systems->Preferences->More Preference->Sessions, I believe but can be wrong. If you meant the menu layout, it also should be in System->Preferences. You just need to go through all items in System tab and you will find it. It should be called something like, Menu Layout, Menu Editor, etc. Different distro has different menu layout, but the X Window is the same and WM is also the same.

2) How to put application icons in Crossover onto the Fedora Linux desktop?
Not sure about this, either. Did you mean the shortcut to start crossover or to start a Windows app in crossover? Either one, right click the desktop and select "create launcher..." You know the rest.

Read some docs. It's pretty much the same as your Windows desktop.
