Most likely your rear brakes have a self adjusting feature. Even before changing the brakes, as the shoes wear down, they tend to become further away from the drum. This feature is needed to push the shoes out when it's time. But I understand this feature works only when you brake in reverse. So try driving the car backwards and apply the brakes a few times. It should get your pedal feel back to normal -- if you haven't done anything wrong :-).
Also, it's completely normal that you see more fluid in the reservoir after stuffing the thicker shoes in at the wheel. The thicker shoes take up more room at the wheel so the fluid is pushed back.
It should be easy...
