Far as I know, the reason why dodge replaced the leaf spring with coil spring is to improve on-road driving comfort. It does not really improve much in term of stability when you driving on a bumpy road. you can check out this:

F150 is still the best work truck, in my opinion.
Ram is not good option for serious off-roading, sure, you can lift it up, put bigger tires on, re-gear and lock, but there is one thing you cannot change, the wheel base. With longer wheel base, your ram will have smaller break over angel. When the 4 door wrangler came out, lots of Jeep fun are pretty skeptical about its off road capacity compare to 2 door, because of reduced break over angel. You will have to put some SERIOUS money into lift and tires to make the break over angel of a ram 1500 match that of a stock Jeep.
Basically, what you want from an off road vehicle, is TLL, tire, lift and lock. On top of that, you can check out axle,engine lower end torque and some other stuff, such as disconnected sway bar.
Overall, you can make most vehicle a offroader if you have enough money to put in. For most people who are not millionaires, we can only choose the best platform and do whatever modification our wallet allow. Which is a Jeep.
