As I know, Toyota recommended 3000 mi oil change interval for all their cast-iron engine block cars, such as Camry 1997-2001, then recommended 5000 mi (or 8000 km) for aluminum engine block cars, such as Camry 2002-2009. I have no idea Toyota ever recommended 7500 mi oil change interval. Can you give an exact example to support your claim for the 7500 mi oil change?

Regarding the engine oil gelling, it most likely happened when some users didn’t exactly follow the maintenance schedule, see below:

Do you have a direct evidence showing that the engine oil gelling once happened to someone who exactly followed the recommended maintenance schedule? Thanks.
