巧手做糕點 1

 個人的喜好:正菜吃中國餐,甜點吃西餐。

BILL'S COCONUT BREAD (椰絲麵包)

(Serves 8-12, from Australian cookbook author Bill Granger)

If you only have sweetened coconut, diminish the quantity of sugar to 1 cup

Cook Time: 1 hour (Preheat oven to 180C / 350F)

Ingredients

2 Eggs

1 1/4 cups (300ml) milk (low fat is fine)

1 teaspoon (5ml) vanilla

2 1/2 cusp (625ml) all-purpose flour

2 teaspoons (10ml) baking powder

1/2 teaspoon (2ml) salt

2 teaspoons (10ml) cinnamon

1 cup and 2 tablespoons (280ml) sugar

2 cups (500ml) shredded coconut

1/3 cup (75ml) butter, melted 

Preparation: 

Preheat oven to 180 C / 350 F. Lightly butter and flour a standard loaf pan.

Whisk together eggs, milk and vanilla. Sift together flour, baking powder, salt, cinnamon. Stir in the sugar and the coconut. Make and well in the centre and pour it the egg mixture. Stir until just combined. Add butter and stir until just smooth, being careful not to over mix.

Bake for one hour, or until tester comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

ClAFOUTI(鮮杏克拉芙緹)

Cook Time: 35 minutes (total prep maximum 1 hour) 

Ingredients: 

Around 15 apricots (700g?) (It depends on the size of your dish), pit removed and sliced in half (or thinner if you want to fill in holes and like it fruity like me!)

Around 150 g of Sugar (lots of sugar I know!)

3 Eggs

1/4 liter sour cream (or 1/3 liter of Milk and melted butter)

Vanilla (option)

Around 130 g of Wheat Flour (5 or 6 spoons probably)

1/8 Teaspoon Salt (option)

1 Tablespoon of Butter to be spread out on the dish (use a spoon to do it thin! No big quantity required)

2 Tablespoons Butter, melted (not required if you put sour cream instead of milk) 

Preparation:

·        In a large bowl, mix the flour, the sugar, the salt, etc. and then add the eggs and finish with the liquid (milk or sour cream).

·        Preheat the oven to 220 degrees. With the butter, grease your oven proof dish.

·        Put the half apricots on the buttered dish

·        Pour the clafouti pastry on top of the apricot in the dish. And you can put small butter bits on floating apricot if you will…

·        Bake in the oven, until the clafouti puffs up and becomes spongy, about 30 to 35 minutes. You might extend the duration if you have a bigger dish… Anyway, the color of the clafouti should help you out to determine when it is done or not!

Isobel's Basic Cupcake with Butter Icing(伊澤貝爾的奶油糖霜紙杯蛋糕) 

Makes 12 Cupcakes (From Heather Holbrook)

Ingredients:

12 cupcake liners

1 1/2 cups (375ml) cake flour

2 teaspoons (10ml) baking power

1/4 teaspoon (1ml) salt

1/2 cup (125 ml) butter

3/4 cup (175 ml) granulated sugar

2 eggs, whisked to blend

3/4 teaspoon (4 ml) vanilla

1/2 cup (125 ml) milk

For the icing

1/4 cup (50 ml) butter at room temperature

2 cups (500ml) icing sugar

2 tablespoons (30ml) milk

1 teaspoons (3 ml) vanilla

Food coloring (optional)

Preparation:

Preheat oven to 350F (180C). Line muffin pan(s) with cupcake liners.

Sift together flour, baking powder and salt and set aside.

In a separate bowl, whip butter until creamy. Beat sugar into butter. Gradually add beaten eggs. Add vanilla to the milk.

Using a rubber scraper, fold the dry ingredients alternately with the milk mixture into the egg mixture, just until all the flour is moistened.

Use an ice cream scooper to scoop the batter into the cupcake liners. Bake for 12 to 15 minutes, or until the tops are lightly firm. Remove muffins from pan and cool.

To make icing, beat butter and icing sugar together to blend. Add milk and vanilla and, if desired, food coloring. Ice cupcakes and serve.

BANANA COCONUT MUFFINS (香蕉椰絲小鬆糕)

(Makes 8, from Gourmet magazine)

 If you prefer something nastier than a moon, use a witch-shaped cookie cutter

Cook Time: 25 minutes (Preheat oven to 375F / 180C)

Ingredients:

1 1/4 cups (300ml) all-purpose flour

1 teaspoon (5ml) baking powder

1/4 teaspoon (1ml) salt

2 very ripe bananas, pureed (3/4 cup / 175ml)

1 stick (1/2 cup / 125ml) unsalted butter, melted

2/3 cup (150ml) sugar

1 large egg

1/2 teaspoon (2ml) vanilla

3/4 cup (175ml) sweetened flaked coconut OR 1/2 cup (125ml) breakfast cereal (like just Right or granola) and 1/4 cup (50ml) sweetened flaked coconut.

Preparation:

Put oven rack in middle position and preheat oven to 375F / 180C. Fill muffin cups with paper liners.

Whisk together flour, baking powder and salt in a bowl. Whisk together bananas, butter, sugar, egg, vanilla and  1/2 cup (125ml) coconut (or the cereal) in a large bowl until well combined, then fold in flour mixture until flour is just moistened.

Divide batter among eight lined muffin cups and sprinkle with the remaining 1/4 cup coconut. Bake until muffins are puffed and golden, about 25 minutes. Transfer to a rack and cool slightly.
