豬腳麵線材料:
麵線, 豬腳, 泡軟的黃豆,
料酒, 生抽, 老抽,
冰糖, 蔥, 薑一塊拍鬆, 帶皮蒜,幹紅辣椒, 八角, 桂皮,
做法:
1.豬腳斬塊飛水洗淨,瀝幹備用.
2.熱鍋下油爆香蔥, 薑, 蒜,幹紅辣椒,八角,桂皮, 冰糖, 加入豬腳翻炒至表皮金黃, 加入生抽, 再翻炒出醬香, 加黃豆, 再翻炒幹爽, 加酒,老抽和水,大火燒開, 轉小火褒煮 1.5小時燒軟.
3.燒一大鍋開水,下青菜燙熟撈出放碗裏, 同鍋再下麵線煮熟, 撈出拌麻油, 放碗裏,
4.碗中放上豬腳, 再舀點黃豆和湯汁澆在麵上,開吃.
