香烤小雞晚餐 - Roasted spiced Cornish hens dinner


以前做過不同的味道的:

2隻小雞, Cornish hens, 每隻剪半, 洗淨, 擦幹水, 用以下料醃過夜.


非常喜歡這幾個香料合成的幹調味料, 上次做羊肉串多的,

小茴香, Fennel seeds
芫茜籽, Coriander
孜然籽, cumin
胡椒粒, black peppercorns
幹辣椒, hot pepper flakes

把它們用小火慢慢烘烤(toast) 到有點金黃色, 涼後, 打成粉, 加鹽, 撒雞上, 放在架子上, 進冰箱, 敞開, 醃過夜

烤箱預熱400F, 烤約40 分鍾, 表麵金黃, 就好了


皮脆, 肉嫩, 很好吃,

配野米飯,

野米, 糙米各一杯, 用電飯鍋 (brown rice擋), 加雞湯, 煮熟,

初榨橄欖油, 炒香洋蔥, 大蒜, 加雞腿菇炒軟, 下酒(1/4 cup Madeira), deglaze 鍋, 倒入米飯, 鹽和胡椒調味,

非常好吃,


吃洋蔥的好處大家都知道, 促進新陳代謝, 排毒, 抗老, 降血壓….可是切洋蔥讓我非常痛苦, 用過各種食品處理機, 可是切出來的質感不是我要的, 清洗又麻繁, 也試過先泡涼水, 或放冰箱, 點蠟燭, 要用非常快的刀, 切時口裏含冰塊, 還買了一付專用眼鏡… 剛又看電視介紹, 買了個切洋蔥的合子, 可是要切絲又怎麽辦呢?

沙拉: 生菜, 西紅柿, 泡橄欖, 帕馬鬆奶酪, 核桃,

用了檸檬汁, 橄欖油,拌醬,
