一包雞肉,一包魚肉,一包排骨

一包雞肉,一包魚肉,一包排骨

這個雞裏脊肉我很愛用, 一包做了以下三個菜:

用鹽水泡一下, 肉質更實一點.


泰式黃咖哩雞-

2 LB雞脯裏脊肉, 用鹽冷水泡半小時, 瀝幹, 擦幹水份, 切片,
1/3 cup 黃咖哩醬,
椰奶一罐(2 cup),
椰糖2大勺,
魚露3大勺,
胡蘿卜1 LB切塊,
土豆, 1.5 LB切塊
1個甜洋蔥切片,
蒜,5-6粒,切碎,
紅辣椒,3-4個,切小粒,
泰檸檬葉-5-6片, (kaffir lime leaves),切絲,
泰檸檬皮, (kaffir lime zest)

油鍋炒香洋蔥和大蒜, 加咖哩醬炒香, 放椰奶, 燒滾, 加所有的料, 拌勻, 加一點水燜煮30分鍾, 就好了.

用這個綜合的菌菇泡水後來炒它, 加了一點蘆筍, 用了蒜片.

用來炒蘆筍, 胡蘿卜, 馬蹄片, 用了一點XO醬,

一包龍利魚用了三片做酸菜魚, 2片做皮蛋滑魚粥,

酸菜魚- 大家都會做, 我就分享一下切魚的方法吧, 魚排先切橫大段, 再豎切片, 這樣不易散開破裂,

魚片要擦幹水, 用鹽, 白胡椒, 米酒, 澱粉馬味, 不要太濕, 也不要太多的粉, 才會裹的緊, 肉才會很滑嫩,

皮蛋魚粥, 加了魚丸,

Costco 的一包三條小排骨是這樣幹掉的:

烤排骨-

排骨用了Trader Joe’s 的醬醃過夜, 用錫紙包好進 325F烤箱烤兩小時, 打開錫紙, 鋪上一層 加工過的莎莎醬, 烤箱加溫到350F, 再烤30分鍾, 就好了.

加工過的莎莎醬 - 用油炒香紅蔥頭和大蒜末, 倒入 Costco 的新鮮salsa (salsa is made of onion, garlic, tomato, jalapeño, cilantro, lime juice, salt and pepper), 炒到軟, 加入紅糖, 醃排骨的醬, 略收幹汁, 就是了.

金桔燒排骨,

樹上金桔好多, 棌來, 壓破一下, 加糖, 進冰箱幾天, 金桔成透明狀,就是糖醃金桔了,

把糖醃金桔放鍋裏, 放進川過水的排骨, 倒入Yoshida sauce (it has soy sauce, Mirin, ginger, garlic, sugar, sesame oil, etc), 一點米酒, 水, 小火燉1小時就爛了, 中間翻動一下.

排骨燒豆油泡-

排骨切斷, 川水, 用油爆香, 加薑片,蔥白段, 拍過的蒜頭, 再爆炒幾下, 加老鹵汁, 冰糖, 紹酒, 水, 小火煮30分鍾, 加入用熱水洗過的豆油泡, 再煮到肉爛, 豆油泡軟了, 就好了.
