麵包,披薩,肉丸子意麵

我的新麵包機來了, 馬上就試做了為愛走天涯的胡蘿卜餐包:

胡蘿卜先紮汁, 剩下的胡蘿卜渣用來做麵包.

胡蘿卜餐包

1又1/3杯水
胡蘿卜渣150克
4杯高筋麵粉(560克)
2茶勺酵母(7克)
4大勺融化的黃油
2大勺白糖
1茶勺鹽

I added 1 cup of raisins after the beep to see how it works.

液體先倒進去, 固體後放,最上麵是酵母,然後啟動麵包程序就可以了,兩磅,medium color.

好象麵包上麵還不夠圓,可能是水不夠. 吃起來到是很軟, 胡蘿卜的味道不明顯. 很好吃,很健康.

又用麵包機裏附帶的方子做了一個葡萄幹麵包送鄰居,很成功,沒拍切開的照片,但在她家時嚐了一口,很棒,下次做給自己吃.

葡萄幹麵包

3大勺糖
1又1/2杯水
2茶勺酵母
4 又 1/4杯高筋麵粉 (bread flour)
2大勺奶粉
1-1/2 茶勺鹽
1小茶勺肉桂粉(ground cinnamon)
2大勺黃油切小丁
1杯葡萄幹

中午又用麵包機發麵做PIZZA 皮,

1- 1/2 C 水
1- 1/2 TB olive oil
3-3/4 cup bread flour
1-1/2 TB sugar
1 ½ tsp salt
1-1/2 tsp active dry yeast

Topping:

Tomato sauce
Mozzarella cheese
Chicken sausage
Sweet onion
Red bell pepper
Black olive
Fresh basil

麵皮發好後,想做成大圓餅,可是搞了半天還是一個怪型狀, 也好, 就是home made啦, 烤箱預熱500F,把pizza stone 放烤箱底下倒數第二格一起預熱, 皮下要墊一張烤紙, 再放topping, 先抹醬, 再灑氣司, 再放其他料, 皮的邊上塗上橄欖油, 用無邊的烤盤把PIZZA 連同烤紙一起, 推到, pizza stone 上, 烤13分鍾, 就好了. 很不錯的 home made pizza, 不油膩, 好吃. Crust 也非常成功.

做了兩個,不同的topping. 沒來得及拍照就沒啦.

晚上用剩下的, 洋蔥, 紅椒, 磨菇, tomato sauce, basil…又做了, Bucati pasta with meatball sauce, meatball 是用了大媽豬的方子稍微改了一點:

meatball:
3/4 pound ground beef
3/4 pound ground pork
1/2 cup Japanese breadcrumbs (我用了意大利麵包粉)
1/2 cup water (我用了牛奶)
6 tablespoons freshly grated Pecorino Romano cheese (我用了Parmesan cheese)
1 large egg
1 large egg yolk
1/4 cup chopped fresh parsley
1 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon crushed fennel seeds (我加的)
1 tsp garlic powder (我加的)

Sauce:
2 tablespoons olive oil
1 cup chopped onion
6 garlic cloves, chopped
1/4 cup red bell pepper chopped (我加的)
1/2 cup mushroom sliced (我加的)
Black olives (I added)
1/2 TB hot pepper flake (我加的)
1 1/2 teaspoons fennel seeds
1 28-ounce can whole peeled tomatoes( sub with: tomatoes basil marinara sauce)
1 14.5-ounce can whole peeled tomatoes (sub with: tomato sauce)
1/4 cup of heavy cream

Some parmesan cheese, fresh basil leaves and parsley to sprinkle on top of pasta

油炒洋蔥,大蒜,紅椒, 磨菇, 加辣椒麵, 小回香, 加番茄醬,cream 燒開, 把做圓子的料拌好, 搓成園子, 一個一個下到鍋裏, 不要翻動, 我沒用油煎園子, 等園子煮硬一點再拌動它們, 慢火煮30分鍾.

煮了一包意麵, 是空心的, 叫bucati, 配這個醬不錯.

星期六就忙了一天吃的. 我鄰居說我是她看到的最愛做飯的人了. 我想我哪天也會厭倦的.
