南洋美食 -- 水果羅惹/Fruits Rojak/Rojak Buah

羅惹是深受馬來西亞人喜歡的一個街頭小食,烈日當頭的時候,來一小盤的水果羅惹,香鮮惹味,很開胃喔!
 
I made Fruit Rojak pretty often in summer, mostly for lunch when I am eating alone. I like the tangy, sweet, spicy flavor of it with refreshing fruits, extremely savory and light on the tummy.


材料:
1/3 隻 黃梨/鳳梨 削皮 去眼 切塊
1 隻中型 黃瓜/青瓜
1/4 隻 中型 沙葛
1 隻 青芒果
(其他適合的水果水蓊/蓮霧)
2 大塊 自製的脆餅  (如下)
1/2 杯 磨碎的 烤花生
2 大勺 烤香的 芝麻
5-6 隻 豆腐泡/卜  Optional

羅惹醬:
3-4大勺 蝦膏
2 大勺 海鮮醬 Hoisin Sauce
1 大勺 黑醬油/甜醬油
1 大勺 辣椒醬 Sambal Tumis
1/2 小勺 酸子醬 Tamarind paste/Asam Paste

脆餅:
1/4 杯 自發麵粉    或
1/4 杯中筋麵粉 加一點點食鹽,1/4 小勺的泡打粉,一點點的蘇打粉混勻代替
1 大勺 食油
1 小勺 芝麻    Optional
2-3 大勺 冰水


Ingredients:
1/3 Pineapple
1 Medium Cucumber
1/4 Medium sized Jicama
1 Green apple/ Green Mango
(Other suitable fruitsBell Fruit/Jambu Air)
2 pieces of homemade crackers (See below)
1/2 cup Roasted peanut (Crushed)
2 tsbp  Sesame (Roasted)
5-6 Puffed tofu   Optional

For the Sauce:
3-4 tbsp of Fermented Shrimp paste/Heh Ko/蝦膏
2 tbsp of Hoisin Sauce
1 tbsp Caramel/Sweet Soy Sauce
1 tbsp of Sambal Tumis
1/2 tsp of Tamarind/Assam paste

For the crackers:
1/4 cup of self raising flour   OR   substitute with 1/4 cup of all purpose flour with a pinch of salt, 1/4 tsp of baking powder and a pinch of baking soda
1 tbsp of cooking oil
1 tsp of sesame seeds    Optional
2-3 tbsp of ice cold water
 

 

1. 把醬料裏列出的所有材料混勻靜置幾分鍾。

注: 此醬料可以裝瓶密封冷藏好幾個月。

2. 把脆餅裏列出的所有材料混合揉成一個小麵團,靜置餳麵15分鍾後分成四份擀成小盤子大小。中火炸成金黃色滴幹油備用。油豆腐切半炸脆備用。

3. 把水果處理好後切成麻將塊大小。把烤香的花生輾碎和烤香的芝麻混勻備用。

5. 在一個大盆裏加入5 大勺的羅惹醬,加入水果拌勻後把脆餅掰成幾塊和炸好的豆腐泡一起加入盆裏,再稍微拌一拌。

6. 取出擺盤,撒上芝麻花生碎,馬上開吃!


1. Place all ingredients listed under the sauce in a small saucepan and whisk together to form a thick paste.

Note: this sauce can be stored in airtight container in the fridge for months.

2. Knead together all ingredients listed under the crackers to form a soft dough, let it rest for 15 minutes. Rolled it out to form a thin disk, deep fry until golden brown and crunchy.

3. Halved and deep fry puffed tofu until crunchy.

4. Clean and cut all the fruits into bite size. Crush the peanuts and roast sesame.

5. Place about 5 tbsp of the rojak paste in a salad bowl, add fruits and mix well, make sure that all fruits are coated with the sauce. Break the homemade crackers into bit size and add it to the Rojak with the fried puffed tofu at the end.

6. Take the rojak out and place on a serving plate, sprinkle crushed peanut and sesame. Serve right away!
