overcooked. like all delicate seafoods, you dont finish cooking

it in the pan - the temperature is hot enough to continue to "cook" after it is transferred to the plate (a warmed plate).

All good cooks would leave 10-15% "uncookness" to let it finish by the remaining temperature.
