you can leave all of your property, that is half of the community property and all of your seperate property (gifts, inheritance, and separate property before marraige), to your children (I am assuming that you are in a community property states).
Just prepare a will stating clearly what property of your goes to whom...if you have a large amount of property, I suggest you to retain an attorney...you don't need to let your hu*****and know what's in the will, and you don't even need to let your hu*****and know that you have a will (in this case, I really suggest you to retain an attorney...)
as to the life insurance, the amount goes to the beneficiary designated in the life insurance form, in your case, your children...if you are financially well off, life insurance might worth buying, because the amount goes to your children with no tax liabilities...
