昨天大家談及好吃的漢堡包,特意推薦GORDON RAMSAY的十分鍾版本(昨天的名字說錯了不是JAMES)。真的簡單好吃的不行。這東西不能總吃,長肉太容易,聚會時可以做為主菜,快手簡單。

由於他做的非常快,我下麵做了一些解析,也有一部分的調整。
- 需要幹材料:牛肉餡一磅(最好是肥肉比重稍微高些的,並是有機肉,味道會好些),兩顆大洋蔥,一個西紅柿,兩片自己愛吃的CHEESE,事前準備的Bacon四片,一個烤幹/冷凍的辣椒, BURGER麵包,一小塊黃油,醃白菜(我用的醃小黃瓜),鹽和現磨黑胡椒。肉餅的厚度大約是1公分左右,不要太薄了,肉容易幹。這個量可以做兩個漢堡。
- 需要濕材料:美乃滋,黃芥末和越南或Sriracha辣椒醬
- 重點是:放各種材料的順序,要高火熱鍋,肉表麵稍微有美拉德效應再翻麵
- Use burger meat or mix grounded beef by yourself
- A touch of salt, yolk, black pepper, grind frozen chilly pepper (pre-make) and mix with a pound of grounded beef (can make two)
- Mix a few minutes and shape into round 1 inch thickness burger meat- 要不停的攪動肉,最好用手可以有手勁的用力揉,而且可以加入CHEESE或碎洋蔥在肉裏。
- High heat the pan with oil, put burger meat one side then push it down, seasoning with salt- flip till the burger meat is dark brown (about 2 minutes)- 不要馬上翻麵,由於肉比較厚,所以要耐心的等待
- Chop onion, grill on the pan with two slices of bacon, add salt/pepper
- Toast buns on the surface then take them out right away
- Put a small piece of butter on the bottom of the burger with one slice of cheese on the top, cover them together with another pan on the top for about 2 minutes
- Mix burger sauce while you are waiting for the burger meat
- Mayonnaise - 主料要多
- Pepper and salt
- Mustard- 輔料,根據個人口味放,不要超過主料
- Sriracha Sauce- 辣醬,不喜歡可以不放
- Slice cabbage, tomato slice then drizzle of slat on top
- Layout and eat
