Saute Clams with hand-pulled noodles
Ingredients - (1)clams(soak thoroughly to remove sand), (2)hand-pulled noodles (boil till al daete, drain and mix with a little scallion/ginger oil to prevent sticking), (3)chopped scallion/ginger/garlic/chili pepper, fermented black beans.
Condiments - soy sauce, oyster sauce, rice wine, chili paste, corn starch solution.
Cooking - heat 2-3 tbs oil, add ingredients (3), chili paste, and stir until fragrant. Add clams, rice wine, stir fry in high heat until shells open, season with soy sauce, oyster sauce, thicken with corn starch solution, add hand-pulled noodles and mix thoroughly.
