Lemon squares

Ingredients:
Crust:
1: 1 cup unsalted butter.
2: 2 cups sifted all-purpose flour, ½ cup white sugar. Filling:
3: 4 eggs.
4: 1 1/3 cups white sugar.
5: 1 tablespoon lemon zests, 1/3 cup fresh lemon juice (1-2 lemons).
6: ¼ cup all purpose flour mix with ½ teaspoon baking powder.

Cooking directions:
Crust: In a large mixing bowl, cream butter on high speed, add ½ cup white sugar beat until fluffy, then add flour in three times, beat the batter until meaty (picture A). Scrape mixture into the 9x13 inch pan and smooth, bake at 325 F / 160 C for 15 minutes and set aside (picture B).


In a medium bowl, beat the eggs until pale and then add sugar continue beat for 2 minutes. Add the lemon zests, along with the lemon juice, to the egg mixture and mix well. Sift flour and baking powder in and beat for another minute. Pour the lemon mixture onto the crust (picture C), bake for another 25-30 minutes, until filling is set. Let cool before cutting.
