越南腸粉

材料:米粉一包,水5杯,豬肉碎一碗,蝦肉一碗(切成小丁),木耳一抓(泡發,切絲),胡羅卜一條(切絲),洋蔥一個(切粒),紅蔥頭8個(切粒),蒜茸,油,鹽,雞精。
做法:

1 先將米粉加水浸至少一晚且多攪拌(比例為:一包粉大約5杯水)。
2 燒熱半杯油加紅蔥粒爆香,將爆好的紅蔥和油分開盛起備用。

3 熱鍋下油放洋蔥,蒜茸爆香,再下木耳絲,胡羅卜絲炒熟盛起備用。
4 分別炒熟炒香豬肉碎和蝦肉再和炒好的木耳絲,胡羅卜絲一起拌勻加鹽,雞精調味盛起。

5 用布紮實鍋口(布要繃緊),在布上近鍋邊的位置開一個小口。鍋裏加入半鍋水,燒開。

6 舀一勺米粉水在布上,用勺底將米粉水劃開(要快),蓋上蓋子待米粉水蒸熟(透明,大約十秒)。用竹篾挑起,放在刷了紅蔥由的案板上,放一匙餡包好。
