備料:
1、雞肉;2、蛋清、辣椒、油、鹽、白糖、味精、澱粉、蔥丁、薑末。做法:1、將雞腿肉切1厘米見方的丁,飛水,裝碗內加鹽、蛋清,水澱粉少許抓勻漿好;2、將青辣椒及筍切成0.7厘米見方的小塊。坐勺加油,燒至六成熟時,加入雞丁翻炒至八成熟,起鍋。另坐勺加油,加入花椒,幹紅辣椒,薑絲,然後倒入青椒及筍丁翻炒,約3分種後放入雞丁,倒入兌好的澱粉汁水翻勺,淋明油,出勺裝盤即可。剔尖
