彭城魚丸,徐州地方傳統名菜,為清朝康熙年間“悅來酒家”廚師李自嚐所創(一說名廚翟世青所創),色澤潔白、口感鮮嫩、安神養胃。康有為,曾書寫對聯讚道:“彭城魚丸聞遐爾,聲譽久馳越南北”。
現在徐州各大飯店都有名師烹製,又稱魚珍珠、彭城魚丸。正宗彭城魚丸顏色白嫩,質細味鮮,放在水中是圓形,落在盤中是扁形,夾在筷子上是長形,工藝高超,非一般廚師所能。
