酸辣湯,開胃解饞。 自己在家做隻要把握好調味料放的次序和量,很容易就做出大廚水平。 還有餐前的炸麵幹,嘎吱嘎吱的要蘸著Duck Sauce 一起吃才過癮。
酸辣湯中配料因個人口味喜好不同, 有加肉絲的, 有純素的, 我的版本是純素的, 湯裏放的醋用的是保寧醋, 也可選擇不同品牌的醋。
配料:
1/4 of Firm Tofu
1 Shiitake Mushroom
5 Black Fungus
1 Small Bamboo Shoot
1 Egg
Minced Coriander
Minced Scallion & Ginger
3 1/2 Cup of Hot Water for soup base
酸辣湯調味料:
1/2 Teaspoons Salt
4 Tablespoons Low Sodium Soy Sauce
1 Teaspoon White Pepper Powder
1/8 Teaspoons Sichuan Pepper Powder
2 Tablespoons Corn Starch with 3 Tablespoons water mixed
4 Teaspoons Vinegar
1 Pinch of Mushroom Essence for taste (optional)
1 1/2 Teaspoons Sesame Oil
Duck Sauce:
1 Tablespoon Orange Jam ( 用梅子醬代替也可以)
1 Teaspoon Rice Vinegar
1 Teaspoon Sugar
1/4 Teaspoon Low Sodium Soy Sauce
1 Pinch of Ginger Powder
