原來煎蛋還有這麽多講究！ 當然，我也有我的講究

當然，我也有我的講究：

1. 蛋不能半熟：因為不熟的雞蛋裏的一種叫avidin的蛋白質會跟食物裏一種營養物質biotin（也就是vitamin H or B7）緊密的連接在一起，無法消化利用。所以要用高溫煮熟的辦法來破壞avidin，讓其不能跟biotin連接在一起。

2. 蛋不能過熟：被燒焦的蛋白質會產生有毒物質。所以盡量不把蛋煎的發焦。

所以，有時候蛋的外麵都熟了，蛋黃還沒熟透。為了既煮熟蛋黃，又不把蛋白燒焦，我就拿鍋鏟戳破蛋黃，讓它流到鍋底被煮熟。至於蛋的形狀嘛，那是極為次要的考慮。所以我煎的蛋，保證健康營養，但不一定能拿到餐館去賣。
