flavor from the skin, thus primary fermentation goes with skin. Another reason to go with the skin is to get more juice. Notice the press was held to the wood pallet, so pressing is really hard to literlly the last drop. I got about 43 gallons of juice, way more than what I got last year, when pressing was on the same day as picking.
