節日加餐～～百花蒸鴨掌

鴨掌用滾水（加蔥薑米酒鹽）焯水3分鍾

百花餡：蝦仁，加一點點肥肉，糖鹽，胡椒粉，生粉。拍碎，剁一下攪拌起膠

鴨掌，控幹，灑少許生粉，釀上百花餡

表麵塗少許蛋清，撒火腿末（或幹貝末）。大火蒸3分鍾

淋上勾芡  

芡汁：少許水、蠔油、幾滴老抽、一點胡椒粉、和尾油，煮滾勾芡

 

 

 

 

 

冬筍雪菜毛豆

 

 

紅棗栗子黃毛雞

糖醋排骨

白灼秋葵

 

 

麵粉裏麵加了一點點土豆粉，這次自己擀的餛飩皮更加滑爽
