get to know the laws before hand

If you want to be a landlord, you should know some basic
rental laws. There are many legal ways to ask for more
rents, you should not mention about big family in your
negotiation. You could say no pets, or charge more for
family with pets, etc. and leave it as that.

Now you get yourself into an uncomfortable situation. I am
sure you would win if they really sue you. You could claim
that your English is not very good in the emails, e.g.
when you mention about big family, you really mean
2 dogs and 2 cats, etc. etc. One thing for sure, don't
send them email without think about it carefully because
they could use your email as evidence if they do sue you.
