If the guy has prior record before hiring then you will have a case. Actually very good case. Make sure the prior record is theft related.
Also make sure that he used a employee key (use his access to make a key) to enter the room not a break in. If it is a break in, (damage the lock or door) hotel can get away.
1. Inadequate hiring.
2. Failed to provide a safe environment for guests
3. You can ask for punitive damage etc.
