"you are screwed" because the resturant owner will deduct all the wages he paid as expense when filing taxes. He will report on his tax form how much money he paid to each employee by stating their names and social security numbers. Then IRS will make sure these employees report the same amount as income on each of their tax forms. So INS will know you worked from the owners tax form even if you don't file taxes yourself.
