As long as her OPT will not expire before October 1, 2005, she can work legally. If her OPT expires before October 1, 2005, she must be off the payroll, but her status is OK.

You should also file EAD while you file I-485. But continue to file H extension even you get EAD. This way you have a back up if there is anything goes wrong with your I-485 in the end. You can have sometime to find a solution if your I-485 be denied but you still have your H status. You then do not have to leave the US immediately.
