If the defendant pays 100% bail in chash himself, when the case is over, he gets all 100% bail back.
If the defendant goes to a bail bonds company (bail bondsman), he pays 10% of the bail, and the bail bondsman put in the rest 90%. When the case is over, the bail bondsman keeps 100% to himself. This is how he makes money.
Of course, if the defendant skips town, the bail bondsman lost his 90% of the bail. The bondsman will hire a bounty hunter to go find you.
