Trust is used to pass your assets to your children, not for hiding or disclosing the assets, so not usefull in your divorce case.
In one step of divorce process, each of you will disclose (list) all assets, shared assets and individual assets.  once you see this list, if you think he is hiding the assets,then you need to investigate what he is hiding (maybe need a private investigator), then you can file a motion to court and complain.  I think you need a lawer for that
