I think you have a very good case. First, for the damage you described, I do not think it worth $1100, especially when the material only costs $130. Second, the landlord did not provide you itemized repair list and etc. in time.

You need to prepare all the paper work (e.g., emails, letters and etc.). Even you do not have pictures showing the damage, you probably have pictures showing the kitchen/wall. Describe the damage to a local repair place (maybe HomeDepot?) and ask how much it is likely to cost.
