You must be physically in US to submit I131, by yourself or by your friend. If your application is submitted after you have departed US, your re-entry permit will not be approved. As soon as you get the case number, you can leave US. For online filing, this is when USCIS website generates a receipt for you.
Every time you enter US, you will be asked the same question "how long have you been out of US" even though you have re-entry permit. You need to demonstrate that you don't have the intent to reside in China permanently.
If you file I131 online, you have only 10-20 words to explain your reason. You can just tell the truth, i.e., 2-year temporary employment in China, etc. I don't think there will be an RFE if you don't clearly explain your overseas employment.
