One thing I am sure is that as soon as your I-485 is approved, you are a permernent residence of US. Therefore, you can not use any document that is valid for non permernent residents only. Such documents include: EAD, AP, H1-B, TN, H4. You really need to obtain evidence of permernent residence before you can work. The best scinario is that you are successful in getting your passport stamped. If not, I guess you can only wait. I know it is a frustrated situation. But there is not really anything we can do about it.
