It seems that I have confused certain terms. As long as you two are married before your 485 approval, she can follow-to-join at any time, by either filing 485 if she is already in the US or filing abroad if she is still in China.

I have a pending I-485 application and I was recently married to a foreign national. When is the best time to include my spouse on my application and how is it done?
--If your marriage to a foreign national occurs prior to the approval of your green card, your spouse may file an I-485 application at any time, requesting that he/she “follow-to-join” your pending or approved application. Documentation that the marriage took place before the primary applicant’s I-485 approval must be included. If your spouse is not in the U.S., a “follow-to-join” application may be made at a U.S. Consulate abroad.
