I'm not so sure about the new rules now, but I guess it might be better if you apply by "biologist" or sth related that you can find on the list. It could be very hard if you apply as physician or surgeon because of your education background. Also, "biologist" is much closer to your current experience.

Couple friends of mine graduated from medical school in China and worked in hospital as well before they left China. One of them studies biology too in Canada, he applied as "biologist" and succeed, it was few years ago though.
