If I were you, I will stay the current company to get GC.
Your I140 not approval, you cannot use EAD working for another company. The only possible way will be keep in current company, and apply a new H-1b for the new company and work under new h-1b for new untill you get gc from current company.

even you get apporoval I140 and 485 filling longer than 365 days, there is some limitation that switch job. You need to have same job some title and reasonable reason leave current company. On the law, you should serve to the current company at lease 1 year after you get GC else you may have problem when apply citizen later.
