in your RFE. It's hard to answer your question without knowing the questions. Every RFE has different request. There is NO general cover letter for it.

they usually request specific evidence in RFE. Just follow their question, then submit your available evidence as complete as possible.

If you can apply NIW all by yourself, then you can reply a RFE by yourself. don't worry.
