1. Your F1 is gone and can not be regain once you depart USA.
2. You don't need a US status in China, and when you reenter USA using AP, you will be in AOS pending.
You should apply for EAD ASAP and may be able to get approval before your return.
3. depending on where you live (the local USCIS office policy on issuing interim EAD 90 days after I-765 RD)
