I have no idea for your case, sorry, but conversion requires new offer identical to old ones, I doubt if you can change to EB2, furthermore, if a lot of people change to EB2, this catagory might need quota too eventually.
for salary, I have no idea, but mine is also lower than submitted one. Just wish both of us will be fine on the salary issue.
But I think your case worth to try, cause your priority date is not as early as mine.
