I know you worry about the separation and work alone without family's support in place. I was in the same situation but I didn't take the offer in California. I found a sponsor near my home and submitted my 485. For changing employer after filing 485, you can consult your lawyer about AC21 or go to www.immigrationportal.com to get some info. It's too late to find another sponsor for you. I think you have to go with the current sponsor to submit your app and the sponsor has to push it in order to have you get EAD. Otherwise they are not interested. 6 month separation is not too long but you have to stay alone. So be prepared to face it.
