This lawyer is just kidding. You may just respond to the RFE by yourself or find a new lawyer to help you. If you don't provide the evidences to prove you have completed the two-year home residency requirement in China, your I-485 will be denied. The entry/departure stamps by the Chinese Customs are the most important evidences and that is why the RFE asked for it.
I-140 belongs to your empoloyer, but I-485 is yours and not related to your employer. So, you do not need to tell/use the lawyer hired by you company.
