I got the 485 FRE for J-1 2 year home residence. My situation is:

I held J-1 visa and studied in US in 1999-2001, then worked in USA till Mar 2002. Then I went back to China on Mar, 20, 2002 and worked in China till May 20, 2004. During 03/20/ 2002-05/20/ 2004, I had a 7 days (July, 13-July 20, 2003) business trip to USA (with G2 visa). From 05/20/2004-07/29/2004, I came to USA to visit my wife as F2 dependent. On 09/15/2004, I came to USA with F-2 visa again and started to work from October 1, 2004 with H1-B

My questions are:

(1) I think I meet the J-1 2 year home residence requirement. Am I correct? 

-Yes. 

(2) Does this business trip make me break the J-1 2 year home residence rule?

-No, the time of two years does not have to be continuous (i.e. for an aggregate). In your case, your home residence requirement = two years + 7 days. You meet the requirement.

(3) How to prove I meet the 2 year home residence requirement, is the passport stamps enough? do I need any other evidence?

Write letter to explain it (address the whole duration as you do here) and then, provide the passport stamps (went out of China and reentered China) and airplane boarding card (if any), etc any evidences you think it is helpful to prove yoru stay in China during that time.
