Here is the letter that I used. I basically copied one template that was posted here a few months back.

The original post:
"Dear Sir and Madam,
My name is…… who was born in China’s mainland. I am currently working at …….. (city, state) as a ……(工作title). This is the same university （company） at which I resided when first applying for a green card in …(year). I still pursue the same … area …...
Here is a brief timeline of my application process:
1. Applied NIW (EB-2) [green card 類別] in …(year) with a priority case date of …(具體時間)
2. I-140 approved in …(具體時間)
3. Submitted I-485 to … Service Center (具體center) in …(具體時間)

The cut-off date of the EB-2 (or EB-3) for China’s mainland born is (具體時間), past my priority date. Thus it is to my understanding that my case is up for approval.
After a long-time waiting, we are eager to receive our green cards so that we can ….(一兩句話表明希望盡快得到綠卡的原因，象回國探親啦，去歐洲旅遊啦)
I kindly ask for an update on our family’s case and when our green card status will be approved. Please consider this request with my sincere gratitude.

My letter sent on August 2nd

1. Applied NIW (EB-2) in 2007 with a priority case date of 04/13/2007
2. I-140 approved on 08/14/2008
3. Submitted I-485 for me and my wife to Nebraska Service Center on 07/02/2007
4. Receipt number: XXXX; Name: XXXX.
5. Receipt number for my wife: XXXX; Name: XXXX.
The cut-off date of the EB-2 (NIW) for China’s mainland born is 04/15/2007, past my priority date 04/13/2007. Thus it is to my understanding that my case is up for approval.
