I don't think the I-140 amendment will result in the Eb3 I-140 invalid. The problem is that you changed your job, so your new employer/lawyer is not qualified to file an I-14O amendment or file a new I-140 based on the old PERM sponsored by your old employer. So, I am not optimistic on this issue.

You had better ask your current employer to file a new EB2 PERM/I-140 for you and use the old EB3 I-140 PD after the EB2 I-140 is approved. Then, just relink the I-485 to the Eb2 I-140 when the PD is current.
