-Bring all the evidences (e.g. hospital bills, Dr. verification letter, diagnosis certifcation, etc.) that prevent you mother from returning to US in time to the US Consulate in Guanghou to apply for a returning resident visa (SB-1 visa) to come back when your mother is healthy. I am not sure whether the other US consutes in China can issue the SB-1 visa, and you may contact them. But I am sure the US Consulate in Guangzhou can issue this visa. The SB-1 visa will allow your mother to enter US and at the same time her GC will contine to be valid even if she is out of US for more than one year without reentry permit.
