Another choice

If your kid has not turned 21 yet by this time, You may file the EB1A I-140 and I-485 again concurrently (file your I-485 and your kid's I-485 together) and then, get the AP and use it to go to Mexico to apply for F1 visa. If the F1 visa application is denied, then use the AP to come back. USCIS may take 6 months to one year to make a decision for the EB1A. If they send your RFE, you can get more time. If your case is denied (I-140 & I-485), then you can appeal I-140, and thus you can get another one or two years (appeal normally take more time to make a decision). So, you may get your NIW priority date to be current at that time.
