I was unemployeed for about 4 months and since my status was adjustment of status, and I have an EAD, so I claimed Unemployment Insurance for about 4 months. Now I am applying for marriage GC, Part 3 I-485 ( the part normally everyone saids No) Item 2, Have you received public assistance in US form any source, US government or and any state county city or municipality, or are you likely to recieve this in the future?

IS UI considered public assistance? or only wellfare does?
-No. UI is not considered as Public Assiance. So, do not fill that information in your I-485.

I am filing the 485 with my Hu*****and's I-130, they only require him to file an I-864 and his tax returns.
Shall I file all my tax returns for the past 3 years even they didn't ask?
-You do not need to provide your income for the I-130 if your hu*****and has enough income to support your GC application. But if your hu*****and has no enough money for the I-130, you can use your whole family income (including yours) for the I-864.
