To my understand, you can use AP to re-enter US. The only concerning is if your I-140 is denied when you are abroad. You may face some difficulties since your AP will be automatically void. You have to apply for H1b visa, but visa officer will also consider the fact that you have been denied for immigration. It's not suggested to use AP during I140 pending, too risky.

Using AP will not affect your H1b status as long as you still work for the same employer.
