Once her I-485 is approved, the I-864 binding is final. You cannot avoid I-864 obligation (unless for expenses occurs after she left US for good or she becomes US citizen)
But in reality, I haven't seen US government ever ask the sponsors to pay for the public welfare that GC holders use.
