When you start to apply GC-485, you can't go back to apply F-1 and OPT since OPT is F-1 visa too.

F-1 and OPT is non-imigration visa. For right now, your F-1 visa is still valid as long as it is within the time limit, but can't be renewed and extended.

But H-1 is different. You can still apply for H-1 if some company sponsor you.
